I’m not a totally “gluten free” person, but I do feel better when I cut WAY back on anything with wheat in it. When I found this recipe I decided to try it – and it’s pretty darn good!
ViSalus Gluten-Free Peanut Butter Oatmeal Cookie
(makes 8 cookies)
1/2 c. applesauce OR mashed over-ripe banana (I used banana)
1/4 c. nut butter (I used crunchy peanut butter)
3/4 c. rolled oats
2 scoops Vi Shake mix
1/4 tsp. cinnamon
1/2 tsp. pure vanilla extract
pinch sea salt if desired
OPTIONAL: 3 T raisins or other dried fruit, or chocolate chips
OPTIONAL: 1 packet stevia or 1 Tbp brown sugar if you want sweeter
Pre-heat oven to 350° F.
Blend mashed banana (or applesauce) with nut butter, then add all other ingredients. Mix until combined well.
- The original recipe I found called for 1/2 cup rolled oats. The batter was really loose so I added 1/4 cup for a total of 3/4 cup oats and I thought it formed better.
- I did not use any sweetener in my cookies, with the banana, peanut butter and shake mix I think it is plenty sweet! If you use natural peanut butter (I didn’t have any today) then you may want to taste for sweetness.
- Now that I’ve tried them I will double the batch, and make one batch with mini chocolate chips for the kids!
- If you have natural peanut butter definitely use that to cut down on the sodium and sugar!
